Seared Chicken Salad

Need a quick, easy dinner that’s also healthy & delicious? If so, this one is for you!
We shop at Cosco and one of my favorite things there is their salad kits! Not only are they large and great for meals, but they’re also affordable and SO good.
This paired with your fav protein makes for a nutritious dinner that doesn’t break your calorie bank, or your literal bank.
Here's the recipe!
Ingredients:
Fresh salad kit mix
2-3 pounds of chicken breasts
Seasonings for chicken breast (pick your favorite!)
Rice or quinoa
Directions:
Preheat the oven to 350 and preheat your cast iron skillet with olive oil. Sear seasoned chicken in the hot pan - about 45 seconds per side.
Then, place on baking sheet and cook the rest of the way in the oven (until the internal temp reaches 165 degrees).
While the chicken cooks, prepare your side of rice or quinoa.
Once the chicken is cooked, let it cool for about 5 minutes. While it cools, you can prepare the salad kit.
After the chicken has cooled, add it to the top of your salad and serve!
