Honey Mustard & Spinach Pork Loin

Pork loin is one of my all time favorites. Not only is it super easy to make, but it's also so juicy and flavorful! One of my biggest philosophies when it comes to cooking is taking boring, healthy food and making it taste GOOD!


I worked on this recipe for awhile before I was able to get it right, but MAN when I did, it was so good. You guys are going to love it.


Here's what you'll need:

  • 27oz of pork loin

  • Salt & pepper

  • 2 Tbsp olive oil

  • 2 Tbsp butter

  • 3 cups baby spinach

  • 2 cloves of garlic

  • 1/4 cup chicken broth

  • Scoosh of 2% milk

  • 2 Tbsp honey mustard

Here's what you'll do:

  1. Preheat the oven to 425 degrees.

  2. Season pork loin with sat & pepper. Heat the skillet with 2 Tbsp olive oil and sear pork on all sides.

  3. Transfer the pork loin onto the baking sheet and bake for 15 minutes or until the internal temp reaches 145 degrees.

  4. Meanwhile, melt butter in the same skillet and add your spinach and a pinch of salt. Stir to wilt for about 3 minutes.

  5. Add garlic, chicken broth, milk, honey mustard, and more salt and pepper.

  6. Stir and reduce for about 5 minutes or until thickened.

  7. Once the pork it cooked, let it rest for 5 minutes. Then, slice.

  8. Finally, top with your sauce and spinach and serve!
