Oatmeal Breakfast Bites

Personally, I am not a huge fan of breakfast food. However, I am a big fan of breakfast. I feel like I can't function when it's 9am and my stomach is grumbling at me. And even though I am not a fan of actual breakfast food, I love quick things like this to get me by until lunch time. Not to mention, these are SO easy to grab as you are running out the door.
Something else I am not a fan of, but LOVE in this recipe are oats. I'm actually quite obsessed with oats lately (and avocados.. but that's another story for another day). For me, I can't do the texture of actual oatmeal - I mean, it's kind of barf-like, don't you think? But, I am really starting to dig substituting flour and other things for oats in recipes!
Oats do spike your insulin, so it is important to recognize how often you are eating them and when, but I can't help but love these breakfast bites. Alright. Enough chit chat, let's get down to it.
Here's what you'll need:
2 1/2 cups of rolled oats
330g smashed bananas (about 3 bananas)
1 tsp salt
2 1/2 Tbsp honey
1/3 cup mini chocolate chips
1 1/3 cup water
3 Tbsp olive oil
1 tsp vanilla extract
dash of cinnamon
Here's what you'll do:
Preheat the oven to 375 degrees.
Line 14-15 cupcake tins.
In a large bowl, combine dry ingredients and stir well.
In a separate bowl, combine all wet ingredient - including bananas.
Mix wet into dry and pour about a 1/4 cup of batter into each cupcake liner.
Bake for 20 minutes.
Serve!
**Tip: you can also double this recipe and freeze your breakfast bites for longer storage! When you want to eat one, pop it in the microwave for about :30 seconds and enjoy!**
