Tex-Mex Skillet

Guys. This is my favorite weeknight meal. There's just something about a one skillet dinner that tastes SO good that makes me happy. Weeks around our place are usually crazy, so anything that helps get dinner done faster is a plus!


We love Mexican around our house, so stuff like this is perfect for us. Plus, it makes so much that it goes such a long way in terms of leftovers for the entire week!


I'm not a huge fan of really wordy blogs, so I'll get right down to it. Here's the recipe.


Ingredients:

  • 2 pounds ground turkey

  • 1 low sodium taco seasoning packet

  • 1 can diced fire roasted tomatoes

  • 1 can whole kernel corn

  • 1/4 cup chopped cilantro

  • Sprinkle of low fat Mexican cheese

  • A squeeze of a lime

Directions:

  1. Preheat oven to 350. Brown the turkey in a skillet with the taco packet, salt, and pepper.

  2. Mix in the diced tomatoes and corn.

  3. Top with shredded cheese and melt in the oven for about 5 minutes or until the cheese is completely melted.

  4. Sprinkle with cilantro and a squeeze of lime.

  5. Serve with rice and tortilla chips!
