Greek Yogurt Pancakes

If you're anything like me, carbs are my preference when it comes to breakfast. I know I know.. you need protein and fats as well - blah blah blah, but for some reason sometimes first thing in the morning I just want carbs! Luckily, these gluten free Greek yogurt pancakes are a much healthier option that feed that carb craving.
They are both fluffy and unctuous, all thanks to the Greek yogurt and oats, working together in perfect harmony. Not to mention, they come together fast and are budget friendly. These have definitely become my husband's favorite weekend breakfast go-to and I'm not even mad about because well.. they're good y'all.
Here's what you'll need:
Ingredients:
1 cup vanilla Greek yogurt
1 tsp vanilla extract
2 eggs lightly beaten
3 Tbsp granulated sugar
1 cup oat flour (you can blend old fashioned oats to make your own)
1/4 cup AP four
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
Here's what you'll need to do:
Preheat your electric griddle/or skillet.
In a large bowl mix together the Greek yogurt, eggs, and vanilla. Combine until smooth.
Add sugar, oat flour, all purpose flour, baking powder, baking soda, salt, and cinnamon in a into the wet ingredient bowl. Whisk until completely combined.
If the batter is too thick, add milk 1 Tbsp at a time until you reach the desired consistency.
Grease griddle or skillet and pour 1/4 cup of batter onto greased pan.
Cook until bubbles start to form (about 2-4 minutes per side).
Serve with butter and maple syrup!
Just typing this is making my mouth water. I can't wait for it to be the weekend again so I can whip up some of these delicious flap jacks! Also - don't be afraid to make too many, these will freeze and warm up just fine!
