Air Fryer Taquitos

One of my husband's new favorite dinners are these air fryer taquitos! Little did I know he loved taquitos so much and I love being able to make them for him! These are also a great weeknight dinner that will not only be quick and easy, but that your family will also love.


Here's what you will need for the taquitos:

  • 12-16 ounces chicken breasts

  • 4 ounces low fat cream cheese

  • 1 chopped chipotle in adobo sauce

  • 1 1/2 cups pepper jack cheese

  • 1 tsp cumin

  • 1 tsp chili powder

  • salt & pepper to taste

  • 10-12 corn tortillas (you can also use flour - as I did)

Here's what you'll need for the sauce:

  • 1 avocado

  • 1/4 cup packed cilantro

  • 1/2 cup lite sour cream

  • 2 cloves garlic

  • juice from 2 limes

  • water as needed for thinning

Here's what you will do:

  1. Bake the chicken until internal temp reaches 165 degrees.

  2. Once baked, shred the chicken with either your hands, forks, or a hand mixer (this is the easiest way).

  3. Add all of the ingredients for the taquitos to the chicken and mix until fully combined.

  4. Warm up your tortillas before rolling

  5. Spray tortillas with a bit of oil before going into the air fryer

  6. Air fry at 390 degrees for about 10 minutes

  7. Blend the sauce ingredients in a blender, set aside

  8. Top with sauce, pico de gallo (you can make your own or buy some), cheese, and serve!

That is literally all you do! There are a few more steps in this one than my other recipes, but this is sure to be a crowd favorite. You can also add or substitute pretty much any ingredient for taste. The best thing about these recipes is that you can make them your own! You can also make a large batch and freeze them for later.
