Ground Turkey Street Tacos

Ever crave those iconic street tacos, but dread the preparation and calories that they often require? Well - I've got the perfect solution for you! These ground turkey street tacos (yes, ground turkey) are full of flavor and are perfect for a quick, delicious weeknight dinner! Recipe and directions below!


Ingredients:

  • 2 pounds 97/3 ground turkey

  • Oakridge BBQ's Smokey Chile Lime Salt

  • 1 bag street taco tortilla shells

  • 2 bags :90 instant rice (microwavable)

  • 1 bag of frozen corn (cooked)

  • 1 container fresh salsa

  • 1/2 container sour cream

  • 1/2 red onion (chopped)

  • 1/2 red onion (sliced thin)

  • 1 avocado (sliced)

  • 2 roma tomatoes (sliced)

  • 1 lime

Directions:

  1. Brown turkey until fully cooked, season with Smokey Chile Lime Salt (or just salt, pepper, and garlic powder) - set aside.

  2. Mix sour cream, 1/2 container of salsa, 1/2 bag of corn (cooked), dash of Smokey Chile Lime Salt, and 1/2 lime squeezed together until fully combined. Set aside in fridge.

  3. Follow directions for rice that are on package. Once cooked, add the rest of the container of salsa, the other half of the lime (also squeezed), and the other have of the bag of cooked corn. Mix together until fully combined.

  4. On a cutting board, slice the other half of your red onion into thin slices, as well as your avocado, and your tomatoes. These will be your toppings.

  5. Serve up all of these elements in any order to build your perfect street taco!

These might not be what your typical street taco would normally look like, but they are equally as delicious and even more nutritious! Healthy dinners that I can dive into without any guilt or regret are my favorite kind of dinners - especially when it comes to Mexican food. YUM.


Weeknights just easier and more delicious - who can beat that?!
